Ingredients

  • 4 Tbsp Vanilla Custard Powder

  • 1/4 Cup Cold Milk

  • 2 Cups Full Fat Milk

  • 1/2 Cup Sugar

  • 3 Big Mangoes, Pureed

  • 250 gm White Chocolate

  • 2 Cups Whipping Cream

  • White Chocolate shavings/ Mango Cubes for decor (Optional)

Method

In a heavy base pan pour 2 cups of milk and let it boil.

Meanwhile, mix Custard powder into 1/4 cup of cold milk.

Add the custard mix into milk once its boiling and keep stirring, till nice thick and smooth.

Let it cool to room temperature.

Melt chocolate in double boiler or over low heat in heavy base pan.

let the chocolate get cool.

Once custard is at room temperature, separate it into two separate bowls. Add cooled melted chocolate in to one half and half of mango puree in another half.

Beat whipping cream till stiff peaks. Fold one half in chocolate and custard mix and fold other half in mango and custard mix.

Layer the mousse mix alternately in serving bowl or shot glasses. Mango custard layer, chocolate custard layer, mango puree.

Top with plain whipped cream

sprinkle chocolate shavings. Decorate with Mango cubes if you like

Chill in fridge before serving

SERVE!!!

Mango Mousse

Notes

  1. Use only vanilla flavored custard.

  2. You can alter the sugar quantity as per your taste.

  3. Do not mix hot or even warm custard and chocolate.

  4. Do not melt chocolate over high heat, as it will burn the chocolates.

  5. Chocolate can be melted in microwave in 15 sec intervals, mixing in between. 

  6. The Key to best mousse is use of good quality Mangoes,  Chocolate and whipping cream.
